Ingredients

  • 6 slices low-sodium whole-grain sourdough bread
  • 1 tablespoon 15 mL extra-virgin olive oil
  • 3 large ripe avocados
  • 1 tablespoon 15 mL fresh lime juice
  • 1 ⅔ cups 300 g cherry tomatoes, halved
  • 3 ounces 85 g part-skim, no-salt-added fresh mozzarella, torn
  • cup about 7 g fresh basil leaves, gently torn
  • teaspoon 0.5 g freshly ground black pepper
  • Pinch of red pepper flakes optional
  • 6 teaspoons 30 mL high-quality balsamic glaze with no added sugar

Instructions

  • Grill the Bread: Lightly brush each side of the bread with olive oil. Heat a grill pan (or use a toaster if you don’t want grill marks) and toast 2–3 minutes per side, until golden.
  • Prepare the Toppings: Halve the cherry tomatoes; tear the mozzarella and basil into bite-size pieces.
  • Mash the Avocado: In a medium bowl, combine avocado flesh, lime juice, black pepper, and optional red pepper flakes; mash to desired consistency.
  • Assemble the Toast: Spread the avocado mixture evenly over the 6 slices.
  • Add the Toppings: Arrange mozzarella and tomatoes over the avocado layer.
  • Garnish and Serve: Scatter basil and drizzle 1 teaspoon balsamic glaze per toast. Serve immediately.

Notes

Use low-sodium whole-grain bread and no-salt-added part-skim mozzarella; omit added salt. Choose a no-added-sugar balsamic glaze. Serve immediately.
